Lunches. Never know what to make!

When it comes to lunch time I never know what to make. I always feel like we make the same foods over and over. But with 4 boys under 5 they seem quiet fine with it. Here are some of our go to meals:

Pizza: We use the crust recipe from Heavenly Homemaker to make our pizzas. You can make them any size and they freeze great. We love pulling crusts from the freezer for a quick lunch.

Mac and Cheese: After many failed attempts I found this recipe and we have never looked back. Our favorite cheese combination is Sharp cheddar, Colby jack and Parmesan.

Tortillas: These are used for so many things. Peanut butter and honey sandwiches, tuna sandwiches, tacos and anything else that we can think of.

Grilled Cheese: Since switching to homemade bread its not easy to cook on the stove. So we take rolls and cut them open, spread butter on top and place the cheese. Then put them in the oven until the cheese is melted. They are very good and allow me to cook as many as I need.

Breakfast: We love having breakfast for lunch. Especially because my kids are not big breakfast people. We love eggs, french toast, pancakes and bacon, biscuits and gravy and so on.

These are just the main things we eat. We try to add some new things from time to time but kids like standbys.

I grew up in a very small town and will always be a country girl at heart.



I do not like Mondays!

Aren't they cute! They all decided to sit for a picture and look!

So this weekend was so boring. I have been healing from hurting my back. I figured out that I hurt myself pushing my husbands car when it got stuck in the snow.
So today we spent the day accounting for every penny spent during our move. It was a lot of adding and now I never want to look at numbers again.

Then we spent time talking to county assessor trying to figure out tax information. Basically a 20 minute phone call and we are still just as confused.

Called a car place because the lights on my van are not working and we have already gotten pulled over twice because my taillight is out and its some sort of electrical problem.

Then our 2 year old took his diaper off and went #2 on the floor.

Also all toys we own are pilled onto the toy room floor in a "swim" pile. This was all before 1...

Now finishing packing a box for my sister in Missouri and trying to clear some books out of my kindle because it keeps telling my I don't have enough room to open any books.

Call Me Cat (book 1) Book Review


Well last week I talked about one of my new favorite authors Karpov Kinrade and I am so excited they released the first book of their new series this week!  Took me a few days before I could read it but when I started I could not put it down.

So first of all I have to say OMG!!!! After finishing the book I was so excited and loved the book so much I had no words. It ends on a cliff hanger that leaves you excited and anticipating the next book.
I love Catelyn. She is such an amazingly, strong women who draws your sympathy and respect. She has had a hard life but does not use that as an excuse. She is willing to do anything she has to to make it through college.

Then her life takes a turn for the worse and with her best friend and a new very hot man she has to try and survive.
Th relationships in this book are so real and organic that you can relate with ease. I think that is what makes me love this book so much is that not only does it suck you in until the end, it makes you fall in love with the characters. You will laugh, cry and look over your shoulder as you read this book. Then when the end comes you will be scanning Facebook for the release date for the second book.

So when I started reading this book I wasn't sure where it was going. I like that it gave you a background but moved quickly enough to keep you interested. Before you know it they are fighting against time and evil to help the Earth. The story has it highs and lows. I recommend to read this book. It keeps you enthralled with its magick and Gods. Reading the book I didn't feel lost because I was able to draw on things I learned in school. They story sucks you in and keeps you reading until the very end. 
I loved Vicki and Nigel together. They are the perfect together and balance each other. They are a realistic couple.

Love soup and bread on snowy days

Its Sunday and snowing.....again. I think that makes 6 of the last 7 days with snow falling. Its evil falling from the sky. Ugh. Anyway on Sunday and Monday my hubby works in a vehicle and has no access to fridge, microwave or anything. So he needs food that can be eaten as is. With this long cold winter I have been making him soup and we found a thermos that keeps his soup hot for 8 hours. Today we made Broccoli Cheddar soup. I love this soup but I haven't been able to find a recipe that matches up to what I would have at restaurants or what has been made using canned goods. After much searching on Pinterest I found a few recipes that I used to make soup.

Broccoli Cheddar Soup
-6 TBSP of Butter
-2 TBSP of Minced Onion
-1/3 cup White Wheat Flour (I grind mine fresh)
-1/4 tsp Garlic Powder
-1/8 tsp Nutmeg
-Dash of Ground Thyme
-Salt & Pepper
-14oz of Chicken Broth
-1 Cup of Milk
-3 Cups of Broccoli Florets (bite size)
-1 Cup of Heavy Cream
-1/4 tsp of Worcestershire
-1/8 tsp of Hot Sauce
-1/4 cup of Colby Jack
-3/4 cup of Monterey Cheese
-1 Cup of White Sharp Cheddar Cheese

Melt Butter in a Dutch Oven. Then add the minced onion and cook on low foe a few mins. Whisk in the flour, cook for 3-4 minutes and then slowly add the milk while whisking.

Once smooth add the garlic powder, nutmeg, thyme, salt, pepper and broth. Bring to a simmer, whisking continuously, until soup has thickened.

Stir in the broccoli and simmer for 10 minutes. Turn the heat off and stir in the cream, Worcestershire, and Hot sauce. Then add the cheese and stir until melted. Taste the soup and add more alt and pepper as needed.

We all loved this soup. It was nice and thick without being to floury. I would recommend making some bread to go with the soup. I didn't leave enough time so I made some after lunch for the hubby to take to work with him. The French Bread Recipe I used makes two loaves of bread. I made one loaf plain and before I rolled up the second loaf I brushed it with melted butter and sprinkled a cinnamon sugar inside and rolled it up.
As you can see I couldn't get a picture before everyone was begging for pieces.

We had the Cinnamon/Sugar bread as a snack and it was AMAZING! Don't know if the bread will make it to tomorrow though.

My Valentines day! Plus Forbidden Mind Book Review!

So this year for Valentines Day I told my husband what I wanted and made sure to send him the link and everything. He thought I was funny but he always complains that he never knows what to get. Anyway I was so excited for my gift this year.
Last month one of my new favorite authors Karpov Kinrade introduced us to her father who is very talented. For Valentines Day Norm's Dream Box made these wood hearts with his daughter and he decided to sell them to whoever was interested. Then they decided to offer a signed book of choice with your order. So as soon as I saw this my husband was notified immediately that I wanted this.


This is my favorite book cover! I realized had this eBook and started it but never finished it. So here is my review.

The book starts out at school with Sam. She is painting and dreaming about the future, going to college and having fun with her friends. Things take a turn when Sam gets told she has to take a job and risk missing the most important event in her life. The thing about her school is they are also a Rent-A-Kid. They are kids with special Para Powers that get rented out to the rich and powerful to work. Sam Starts to find herself and not letting others push her around anymore.

Drake gets introduced while he is surfing. He feels at home in the water but today he senses someone watching him and not for a good reason. He gets back to his apartment and his roommate tries to get him to lay low but Drake doesn't listen. Then while heading to visit Father Patrick he springs into action and uses his powers to save a life. Father Patrick protects him and warns him to be careful. Drake decides to continue living his life and heads to a surfing competition. That is when things go south.

Go read this book! I loved it. I started the book over and could not put it down. The story is so well written. They make sure that you can follow along as it jumps from Sam to Drake's point of view. This book is the first in a trilogy and is a must for lovers of paranormal, romance and mystery.

Quick food and Valentines Day food for the boys!

So this snow and all our house issues are stressing me out. Which stress the boys out which make for some long days!

This was out my front door at around 5 yesterday and it was still snowing. We are close to having 20 inches on our yard with this snow. Then I saw they are predicting more snow tonight! More snow!! 

So with all this snow I wasn't in the mood to really cook much so we had a hodgepodge of food for dinner. We made Pumpkin Chocolate Chip Muffins from Heavenly Homemaker, some Cheese Crackers from 100 Days of Real Food, leftover buns from lunch and fruit. My kids love anything baked

So for valentines day we decided to make all our meals heart shaped. The boys thought it was the funnest thing we have done.

The Boys each got to cut their pancakes into hearts and we even got to save some for future breakfasts.
For lunch Hubby & I had Huevo in the Hole
We made the boys tiny heart shaped peanut butter heart sandwiches and applesauce.

For dinner we make Heart shaped pizzas
Love making pizza and made extra heart shaped crusts for the freezer. So not only did we have heart shaped food we also got some food for the freezer. We added pancakes, tortillas and pizza crust. So besides being stuck inside we had a nice day

So tired of all these "Parenting" articles telling us we suck

Everyday I get on facebook or yahoo all I see is articles about how you are sucking as a parent or how you are ruining your children. Its all getting ridiculous! All these articles say is how if you do anything except be a perfect parent your kids are going to be ruined and not be a functional adult.

How come there are not any articles that talk about how to get over the guilt of not being internet perfect.  These articles do not seem helpful they seem like the people who wrote them know everything and are the worlds greatest parents. Do these people not know that I beat myself up enough. So they not know that when I wake up to marker all over everything including themselves after I spent the previous night scrubbing marker off them because their older brother didn't listen! This comes after you haven't slept for 2 weeks or gotten to leave the house because of snow for months. But according to articles I should be happy and understanding and talk with love. And don't get me wrong I love my children and love them being creative but not on my walls, carpet and chairs.
See plenty of messy art. Its a weekly thing here but I am so tired of all the articles about how if you every get frustrated, angry, raise your voice or any other "bad" emotion your kids are ruined. Why cant we raise our children to understand that being human means not always being perfect. Shouldn't we teach them to be empathetic, sympathetic, caring, kind and loving. But also that its ok to be upset, angry, frustrated and sometimes not be perfect. I know I want to make sure that my kids know that all emotions are ok and how to deal with them in the right way.
Some days I know I am my worst critic. I feel that I could do more to be a better wife, mother and person but I am human. I have days that I dont want to deal with people and just clean or cook or 
read. Sometimes I just want to hang out with my kids.

I hope that someday we can read articles about how parenting is hard. That if we raise our kids to be honest and compassionate they will be ok. To raise them that if they struggle as adults that its not because their parents messed up or ruined them. Teach them to take responsibility for themselves while knowing that their parents are always there to give them a hand when needed.

So I will just say this. You are an awesome parent! You love your kids and try your hardest to do what you
feel is best. If you have a bad day or don't feel you live up to other peoples expectations, just remember there are parents everywhere who feel the same way. You are not alone. You are loved. Do not listen to anything that you don't feel is right.

So I found BookBub a few months ago while checking out a blog post. See I had all the reading apps on my iPad but never used them to much. For me I am a purest when it comes to books. I love bookstores!! I love going into the store and looking for books. I own way to many books lol.

Anyway I wanted to try and find some eBooks to discover new authors and save space. So I signed up for bookbub and I get emails every day about books. Some of the books are free and some are sales.

I am tired of the Sickness and Snow

So this weekend has been sucky! First the battery in my van dies and then I had a sick baby. When the baby is sick then the mommy doesn't sleep. Then when the mommy doesn't sleep everyone seems to be in a bad mood also. Then we run out of breakfast food and clean cloths.
*sigh*
See my poor little man yesterday. It was the only way I could get anything done. Thankfully I had essential oils that knocked the fever and yuckiness out of him. He took a bath with some Thyme oil. Then rubbed some lavender oil on his feet, neck, behind his ear and on his forehead. Last I made a blend of Eucalyptus, lavender and tea tree oil blend and put a few drops in to diffuse. He woke up this morning happy and playing.

Now if only I could get some sleep. Supposedly our builder is going to come and work on some more things in our house but it is snowing again so I don't know if he will actually show up. Well off to make some breakfast foods for the freezer. I told the boys I would make donuts yesterday and I forgot so that is going to be our snack today.

Snowball fights, hot chocolate and movie night equal the Perfect day

All this snow is seriously driving me crazy.  On Monday when my husband tried to go to work he got stuck half on the road/half on the driveway. So yesterday after my hubby shoveled behind his car, I shoveled the walk and half around my car. I think that counts as a workout lol.

Doesn't it look so nice and clear. My back hurts this morning but now I know my kids can walk without falling. Well any more than they normally do.
The husband and I had a snow ball fight and let the kids come out and burn off some energy. After shoveling all the boys were clamoring for hot chocolate. Well thankfully I found a hot chocolate mix that is better than store bought packets. I found the Hot Chocolate Mix over at one of my favorite blogs Heavenly Homemaker.

Its so simple just put the milk and the mix into a pot. Then whisk until its incorporated into the milk and its the right temperature for you.

Here is mine and hubby's cups. Did not make enough for us and the kids. 
This stuff is so chocolaty I am glad I was able to convince my family to drink it over packet stuff. 
Then we decided to have family night. They just put The Croods onto Netflix so we bought some pizza and had dinner in the living room while watching a movie. We decided that twice a month we are going to do a family movie night. Hopefully we can move from movies to games in a few years but the boys are still a little to young to sit and play games.
