It’s Here! Time for the 2019 LIFT Campaign!

Every April, it’s amazing to see the romance reading, writing and loving community rally around families living with Autism. A few years ago, authors Ginger Scott and Kennedy Ryan launched LIFT 4 Autism, the charitable initiative raising funds for ASD families during Autism Awareness/Acceptance Month. With 1 in every 59 children diagnosed, Autism is now the fastest growing and most common disability in the US. Many of the therapies and services those living with Autism require are not covered by insurance. It can be an expensive and difficult diagnosis to navigate. We are once again partnering with Kulture City, an amazing organization that does incredible things for ASD families. Discover more about their programs at kulturecity.org.

Gluten free Dairy free Tiramisu with vegan "cheese/cream" filling



For The last year w have been dealing with the world of food allergies. We found out last September that my oldest son had a severe dairy allergy along with alot of outdoor allergis. Armed with an pi pen we startd to navigate this world. Next thing I know he starts reacting to things left and right. Now he is no peanuts, almonds, cashews, gluten, corn, dairy and peaches. 

To add my 3rd child ( he is almost 6), gets severe migraines. After a few appoinments we found out that any dairy, gluten, msg, strawberris and nitrates are his triggers. If he has any of these, and we don't catch it with medicine fast, he is laid out for at least a day with a migriane.

I found out i have a mild dairy allergy and gluteen intolerances, as well as the msg, sulfaties and nitrates that trigger migrains.

So its been rough. My oldest just wants to be normal and eat like everyone else. So I try very hard to make foods for our family that he can eat to.

WHich brings me to the Tiramisu. I love baking and watching The Great British Bake Off. Its so awesome. My husband happens to love deserets, so it works well. I stopped baking for awhile dealing with all these changes. 

A couple days ago we saw and pisode where they made a Tiramisu cake and I knew I had to mak it for my husbnd (his favorite desert besides pumpkin pie). After alot of research I found a sponge recipe and realized that I would have to make my own cream recipe.

So this is the Gluten Free Victorian Sponge Cake. I used soy mild and a gluten free flour blend I make. I also made it in a baking sheet since I needed to make layers

The sponge cut into 4 pieces for the layers
For the cream I could not find anything that didnt us nuts in some way. So i combined a bunch of different ones and tweaked it.

"Mascarpone" Cheese

  • 16 oz Firm Tofu
  • 2 tsp Nutritional yeast
  • 4 tsp vanilla
  • 1/4 cup + 2 tbsp powder sugar
  • 3/4 cup non dairy milk (I used soy because thats what I had)
I broke up the Tofu and put in my nut milk bag to squeeze out the water. You can use cheese cloth or a dish towel. Then I added eveything to the blender and bleneded until smooth. I had to scrape it down a few times. If I had a food processor I woufl have used that.

Next thing I did was make some coconut whipped cream. I took 2 cans of cocont milk and put them in the fridge. After a few hours I opened the can and then scraped off the cream. I beat it with my hand mixer until it was whipped cream.

After I had the cream and cheese done, i mixed them together.

Then I started assembling. It went like this;
  • Put sponge down
  • Brush coffee on the sponge ( I used Cafe Bustelo coffee I had brewed and chilled in the fridge)
  • Then the Cream/cheese mix on the sponge
  • Then some dark chocolate shavings ( I used enjoy life dark chocolate)
  • Repeat with the rest of the sponge
On the top You put the coffee on the sponge and do a crumb coat with the cream/cheese mix. Then add more of the mix and top with cocoa powder.


Not the prettiest but dang tasty lol.
For next time I wont be making the coconut whipped cream because of the coconut taste. 
Also making sure the chocolate pieces are smaller and more coffee on all the sponge layer.

 He is my non food allergy hubby eating his second piece for breakfast. He said it was really good for being allergy friendly.

Chocolate Pumpkin Spice Kahlua Bundt Cake = Yummyness

So the hubby and I were watching cupcake wars on Netflix and it made me want to bake something. So I decided to use my bundt cake pan and try to make a rum cake.
I had to search forever for a recipe that did not have cake mix and instant pudding it it. I mean almost all the recipes called for it.
Finally I found a recipe for Homemade Chocolate Rum Cake over at Always order Dessert. It was so simply and all from scratch. Never making a rum cake before, I was sad when I found out I had to let it soak. But boy am I glad I did.

I followed the recipe pretty closely and just cahnging a few things. I used dark chocolate instead of bitter sweet and Pumpkin Spice Kahlua instead of Rum. We also made this Vanilla Pudding.

So this morning we woke up, ground up some fresh coffee and had ourselves a piece of cake.
(dont judge you know you have all done it before).
IT WAS AMAZING!!! So moist! Not soggy or to sweet!
Isnt it so pretty!
We had so much left over that we cut it up and flash froze it to save for later. I am excited to see how this will be from the freezer!

My New Favorite Cookbook!

One of my favorite things, outside of reading, is cooking! I have a slight obsession with cookbooks. My most recent one comes from one of my favorite blogs. Around 3 years ago I decided to start changing the way my family and I ate. We decided to start a real food life style. After talking to my awesome sis, I visited the 100 Days of Real Food.

For me I really wanted to start cutting out sugar. At the time we had 3 boys and I was noticing very hyper and extremes with their behavior. I never realized how much sugar was in everything! Not to mention all of the dyes and other grossness. It was a long process with many errors, but we finally live a fairly real food lifestyle

Now we make almost 90% of items homemade/from scratch. We still eat out sometimes and buy treats, but are working on teaching them how to be smart about what goes into their bodies.

One of my favorite recipes is the Creamy Whole Wheat Mac and Cheese. We tried so many before my children found one they liked. Now we have this awesome cookbook.

Is it almost Mothers Day already! Plus a new family favorite.




I cant believe that Mothers day is tomorrow. My hubby is working a double today so I am here trying not to go crazy with boredom and tiredness. Its rainy today so we are all stuck inside and that makes my little ones stir crazy.
We recently got back from our vacation in MO and I have been trying to stock up on food and get my menu back up and running again. It was fun to be down there visiting family. I miss the warm days but I do not miss the tornadoes.
So I made a couple freezer meals for when the hubby goes away for AT and prep for tomorrows lunch. Then on to the never ending laundry. I swear I do not know how such little people make so much dirty laundry!
Well here is a recipe I found on one of my nightly Pintrest scans and customized based on what I had. It has become a new favorite around here.
I found the recipe on Yellow Bliss Road its called One Pot Cheesy Chicken Pasta. Now I used this as a guideline but added and took out what I wanted. It was really good and I almost didn't have enough to save for the hubby to take to work.
So first I added some olive oil to the pan to heat up. Then added some dried minced onion and minced garlic.
Don't mind the pot. Been trying to figure out how to get these stains out for awhile.
While it was heating up I got out my broth. Since I forgot to label my jars before I put them in the fridge one was chicken and the other was veggie. Was still good lol. Then I got out the jar of leftover sloppy joe from my freezer. It was probably about 1/2 of the recipe in the jar. 

Since I wasn't using canned Manwich I found out that 1 can of water equals 1 1/2 cups of water.

After I had everything out, unthawed and the pan was ready it was time to pour everything in. We used shell noodles because my 5yr old insisted and I really didn't mind.

Smelled so good already and reminded me of hamburger helper. I decided to not add chicken since I did not have any out. Also I thought it would taste weird with the sloppy joe mix.

Decided to add some tomato sauce to the recipe since it was sloppy joe based. Plus I only had this little amount left and it was sitting in the fridge lol.

After the noodles cooked and it thickened I added the cheese. I used cheddar and Colby jack because that is what I had. We were runny low on cheese since it never really last long in this house.

My little helper decided he needed to use both oven mitts to help me stir and serve dinner. Isn't he just the cutest!

The final product was so good and it really only took 30 mins,

What to make when you have cabbage? Haluski

Earlier in the week I made a Korean meal for the hubby. I had bought a small head of cabbage to make a slaw to go with our meal, then ran out of time to make it. 
So I was left with a whole head of cabbage in the fridge and no idea what to do with it. Then I remembered when I was little my mom making haluski, or cabbage with noodles. It was one of my favorite meals. Well outside of pasta.
It is such a easy meal to make and very cheap.

First you cut up a head of cabbage and throw it into a large pot with at least 1/2 stick of butter. Cook until the cabbage cooks down significantly.
I also added some garlic because I love garlic.
While the cabbage is cooking down, start cooking some noodles. We always made ours with egg noodles but apparently I was out. So I just used a box of spiral noodles.
When the noodles are done cooking and the cabbage is cooked down, add the noodles to the cabbage. Add more butter. I added another stick plus a good amount of salt and pepper.
Now all down. It easy, good and a cheap meal. Plus you can customize it however you want. Alot of people add bacon or anything else they want but I like it simple. 
This meal adds up to around $5 and was enough to feed 3 of my boys, my husband, my brother in law and myself.

Homemade seasonings and condiments help unless you are sick.

So we have been trying to make our condiments and seasoning blends to be healthier and save money. It works pretty well once we found recipes for all the things we like. Its fun to try out new recipes and finally finding that one that keeps the store bought junk out of my fridge,

Now when I am sick it makes things a little harder. My boys got sick this weekend and then unfortunately I got sick. Which in this house means that we don't eat as healthy and I do not get the chance to make the extras I need.

Here are some of my favorites

Homemade Ranch Dressing Mix from Heavenly Homemaker
My 2 favorite was to use this mix is for dip and Ranch chicken. We take 2tbsp of the mix and add it to a 2 cup container of Greek yogurt and keep it in the fridge for dip. The only thing we haven't tried with the mix yet is actual dressing for salad.

I found this recipe on pintrest and it is pretty good. Now it is a sweeter bbq sauce recipe and I recommend to make this at least the day before. This is because it taste really sweet if it doesn't have time to sit. We used this again a couple days after we made it and it was a lot better.


Homemade Ketchup from Skinnytaste
This has become our staple ketchup recipe. As you can see we put it in an old ketchup bottle to make it easier to use. We always triple the recipe because we use it so much. The recipe calls for sugar and honey. We use just honey and leave out the sugar and it still taste great. I like it better because I am not a fan of sweet ketchup.

I have been making chicken broth for awhile and decided to try making veggie broth. I dont know why I waited for so long because it is so simple. Cut up all veggies and let it simmer for an hour. Then drain and put broth in jars and wait until it cools and freeze. I am hoping to get a pressure cooker and can these to make freezer room.


Homemade Mustard from Chocolate Moosey
I have been looking for a good mustard recipe that I can make in small batches. My hubby is the only one that likes mustard so I do not need a whole lot. I finnally found this recipe and it is so simple. I halved the recipe since I did not have a whole lot of mustard powder on hand. It seems like it would be easy to double if needed.


I have other things on my list like Mayo and actually ranch dressing for my salad. Also hoping to make some beef broth and making vanilla with rum.

Lunches. Never know what to make!

When it comes to lunch time I never know what to make. I always feel like we make the same foods over and over. But with 4 boys under 5 they seem quiet fine with it. Here are some of our go to meals:

Pizza: We use the crust recipe from Heavenly Homemaker to make our pizzas. You can make them any size and they freeze great. We love pulling crusts from the freezer for a quick lunch.

Mac and Cheese: After many failed attempts I found this recipe and we have never looked back. Our favorite cheese combination is Sharp cheddar, Colby jack and Parmesan.

Tortillas: These are used for so many things. Peanut butter and honey sandwiches, tuna sandwiches, tacos and anything else that we can think of.

Grilled Cheese: Since switching to homemade bread its not easy to cook on the stove. So we take rolls and cut them open, spread butter on top and place the cheese. Then put them in the oven until the cheese is melted. They are very good and allow me to cook as many as I need.

Breakfast: We love having breakfast for lunch. Especially because my kids are not big breakfast people. We love eggs, french toast, pancakes and bacon, biscuits and gravy and so on.

These are just the main things we eat. We try to add some new things from time to time but kids like standbys.

I do not like Mondays!

Aren't they cute! They all decided to sit for a picture and look!

So this weekend was so boring. I have been healing from hurting my back. I figured out that I hurt myself pushing my husbands car when it got stuck in the snow.
So today we spent the day accounting for every penny spent during our move. It was a lot of adding and now I never want to look at numbers again.

Then we spent time talking to county assessor trying to figure out tax information. Basically a 20 minute phone call and we are still just as confused.

Called a car place because the lights on my van are not working and we have already gotten pulled over twice because my taillight is out and its some sort of electrical problem.

Then our 2 year old took his diaper off and went #2 on the floor.

Also all toys we own are pilled onto the toy room floor in a "swim" pile. This was all before 1...

Now finishing packing a box for my sister in Missouri and trying to clear some books out of my kindle because it keeps telling my I don't have enough room to open any books.

So this year for Valentines Day I told my husband what I wanted and made sure to send him the link and everything. He thought I was funny but he always complains that he never knows what to get. Anyway I was so excited for my gift this year.
Last month one of my new favorite authors Karpov Kinrade introduced us to her father who is very talented. For Valentines Day Norm's Dream Box made these wood hearts with his daughter and he decided to sell them to whoever was interested. Then they decided to offer a signed book of choice with your order. So as soon as I saw this my husband was notified immediately that I wanted this.


This is my favorite book cover! I realized had this eBook and started it but never finished it. So here is my review.

The book starts out at school with Sam. She is painting and dreaming about the future, going to college and having fun with her friends. Things take a turn when Sam gets told she has to take a job and risk missing the most important event in her life. The thing about her school is they are also a Rent-A-Kid. They are kids with special Para Powers that get rented out to the rich and powerful to work. Sam Starts to find herself and not letting others push her around anymore.

Drake gets introduced while he is surfing. He feels at home in the water but today he senses someone watching him and not for a good reason. He gets back to his apartment and his roommate tries to get him to lay low but Drake doesn't listen. Then while heading to visit Father Patrick he springs into action and uses his powers to save a life. Father Patrick protects him and warns him to be careful. Drake decides to continue living his life and heads to a surfing competition. That is when things go south.

Go read this book! I loved it. I started the book over and could not put it down. The story is so well written. They make sure that you can follow along as it jumps from Sam to Drake's point of view. This book is the first in a trilogy and is a must for lovers of paranormal, romance and mystery.

Quick food and Valentines Day food for the boys!

So this snow and all our house issues are stressing me out. Which stress the boys out which make for some long days!

This was out my front door at around 5 yesterday and it was still snowing. We are close to having 20 inches on our yard with this snow. Then I saw they are predicting more snow tonight! More snow!! 

So with all this snow I wasn't in the mood to really cook much so we had a hodgepodge of food for dinner. We made Pumpkin Chocolate Chip Muffins from Heavenly Homemaker, some Cheese Crackers from 100 Days of Real Food, leftover buns from lunch and fruit. My kids love anything baked

So for valentines day we decided to make all our meals heart shaped. The boys thought it was the funnest thing we have done.

The Boys each got to cut their pancakes into hearts and we even got to save some for future breakfasts.
For lunch Hubby & I had Huevo in the Hole
We made the boys tiny heart shaped peanut butter heart sandwiches and applesauce.

For dinner we make Heart shaped pizzas
Love making pizza and made extra heart shaped crusts for the freezer. So not only did we have heart shaped food we also got some food for the freezer. We added pancakes, tortillas and pizza crust. So besides being stuck inside we had a nice day
